So with the world cup furore over for another four years we can all wrench ourselves out of our armchairs, de-robe our cars and houses of St.George flags, and start experiencing natural light again. South America seemed to be flying high at this stage but hot favourites Brazil and Argentina fell at the final furlong leaving a pan-European clash for the last game. Uruguay were the shock of the tournament but were widely chastised for performing their very own ‘hand of god’ act, knocking out local favorites Ghana.

For a second year running then, European football fans have won bragging rights over their South American counterparts. The opposite is occurring in the Wine trade however with some really vibrant, new creations coming out of countries like Argentina, Chile, Brazil and Mexico right now. Chile in particular is producing some sterling Reds, the grapes grow in rich, fertile soil on the high altitude vineyards of the Maipo and Raphel Valleys. Just like their brave, youthful squad who gave Spain a real fright in the group stages, Chilean Wine such as the full bodied Cabernet Carmener Montgrass are challenging established European favourites such as Spanish and Italian Wine

Thank the wine gods that there are more variations that red or white wine. There are literally tons of different wines for people to try, including the sweet dessert wines. The biggest problem with variety is that most people are afraid to step out of their comfort zone or have the money to just try wines. The problem with this uncertainty when buying wine is because you are most likely not to venture out of your comfort zone and stick with old wines you know already. Here are a few tips to pairing dessert wines with your meals.

How about instead of mixing some other flavors with the wine, you just try it by itself? We always have a bottle of St James Winery Catawba Dessert wine on hand, and we like to drink a glass of it chilled after a nice big meal. Why not just drink the sweet dessert wine by itself. You never want to pair anything sweeter than the wine with it. It will end up overpowering the sweet notes of the wine and you'll be left with a taste that is simply too rich to enjoy.

Walnuts go great with port wines. Since port wines are extraordinarily sweet, they go great with walnuts because they have a high level of tannins making them bitter. Winemaking is one of the oldest alcoholic traditions around today. Wine originated in Europe in 6000 BC. We are not 100% sure if wine existed before 4500 BC, but historically evidence provides us with that date from Greece, Bulgaria and Macedonia. Wine played a very important role in ancient Greece, it was a way of life, an essential part their culture.

Winemaking is defined by producing an acoholic beverage by simply fermenting food products, more specifically fruits. Fermentation is basically the process of rotting food in a controllable state. Yeast is added to the mush or grape mixture and the yeast consumes the sugars naturally found inside. The end result produced by this process is alcohol. Some varieties of grapes or fruit have a higher sugar content, and end up with a sweeter wine, Like Strawberry Wine.

Grapes are not just the only type of fruit that winemakers use. Almost all fruits are used in winemaking, most likely being apple, peach, berry or cherries. Blackberry wine in particular is one of the sweetest.A few other commonly used foods in winemaking are rice, barley and ginger.

Now when it comes to grapes for wine, there are so many different varieties it will literally make your head spin. Since there are so many different types of grapes in the world, each one can be created or cultivated for a specific use; such as some would be better for jams and some would be better for juice. Some more common names would be Chardonel Wine, Catawba, Concord, Norton and Vignoles. Another fact that is important to know about wine is the difference between blended and varietal wines. Varietals are more specific species, they contain 75% or more of a single species of grape and blended wines could be a mix of any. Blended wines can also be extremely expensive contrary to their "inpure" sounding description.

 

 


What Does Your Wine Rack Look Like?

A couple of years ago I was lucky enough to enjoy a bit of a boozy weekend in Dublin. My husband had been invited over by a supplier of the firm he works for.  Everything was paid for and all we had to do was get ourselves to the airport for our flight to Dublin.

We were met at the airport by our host and he swiftly whisked us off to his house so we could unpack.  You should have seen my face when I saw how big his house was – it was enormous.  He had everything you could ever imagine – a swimming pool, sauna, tennis court, gym and even a home cinema.

Waiting for us in his kitchen was some beautiful Australian wine, nicely chilled in a wine cooler and bottle opener all ready to go.

Our host was a real wine buff and has his own wine rack down in his cellar. He imports a lot of wine from Australia and was explaining that the cellar has to be kept at just the right temperature, which is quite difficult at times.  He went on to say that if conditions aren’t correct, then that’s when problems can happen.  An example he was telling us was that if the humidity is too high in the cellar then this makes the corks dry out and in turn would allow air to get into the bottle and oxidise the wine, which would be disastrous.

After we had finished our drinks we were off for a night in the Temple Bar area. It was absolutely fantastic and the Irish are so hospitable and friendly.  Nothing seemed to be too much trouble and they are really lovely people.  My husband was in his element drinking his beloved Guinness.  Mind you I think the next morning he wished he hadn’t drunk quite so much.

We had a brilliant weekend and it is certainly something I would love to do again.  Next time we go though, I think perhaps we should lay off drinking quite so much alcohol!
